4 eggs
2 cups sugar
1 cup oil
3 1/2 cups flour
2 cups unpeeled zucchini, grated
1 1/2 tablespoons baking soda
1 tablespoon salt
3/4 tablespoon baking powder
1 tablespoon cinnamon
1 tablespoon vanilla
Beat eggs, gradually add sugar and oil. Combine dry ingredients and add
alternately with zucchini. Stir in walnuts and vanilla. Pour into 2
greased 9x5x3-inch loaf pans. Bake at 350 degrees for 55 to 60 minutes.
May be refrigerated or frozen.
