ZUCCHINI LASAGNA

1 16oz. package of lasagna noodles
4 zucchini, sliced and cooked in olive oil till soft
3 eggs
1 16 oz. container ricotta cheese
16 oz. shredded cheddar cheese
16 oz. spaghetti sauce (roasted garlic is the best)
1/2 cup bell pepper, chopped
1/2 cup onion, chopped

Preheat oven to 375 degrees.  In bowl, mix together eggs and ricotta cheese.  In a rectangle pan layer spaghetti sauce, noodles, ricotta cheese mixture, zucchini, bell pepper, onions and cheddar cheese, then repeat till all the noodles are used.  Top with sauce and cheddar cheese.  Bake uncovered for 35 minutes.
