ZUCCHINI PASTA

3 large zucchini
1 onion
1/2 cup Picante' sauce
4 tbsp. parmesan cheese
3 tbsp. olive oil (more if needed)
6 cloves garlic
1/2 tsp. dried basil
1 bag penne pasta, cooked and drained

Thinly slice zucchini, and chop onion and garlic. Cook zucchini in hot oil in skillet until tender - (divide into 3 portions for more thorough cooking).  Reduce heat to medium, add onions and garlic; cook and stir 1 minute.  Add Picante' sauce; cook and stir 45 seconds.  Remove from heat; stir in basil and parmesan cheese.  Cover and let sit for 5-10 minutes.

Serves 6 to 8
